Mediterranean Quinoa Bowl

Ingredients
- 1 cups quinoa, 2 cups water
- spinach or kale
- cucumber
- diced cherry tomatoes
- feta cheese
- kalamata olives
- Avocado, sliced
- pepperoncini
- thinly sliced red onion
- 1 can chickpeas, rinsed
Dressing
- 1/4 cup tahini
- Juice of 1 lemon
- 1 tablespoon red wine vinegar
- 2 garlic cloves, minced
- 1 tablespoon basil, chopped
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Pinch of salt and pepper
- 3 – 5 tablespoons water
Instructions
[!note] This recipe is a Build Your Own Bowl kind of deal. Improvise with the ingredients. Add what you like, omit what you don’t.
- Whisk or blend the ingredients for the dressing together.
- Simmer the quinoa with the water over low heat, covered, for between 15-20 minutes until all the water is absorbed.
- Or follow the instructions on the box if you bought a box of quinoa.
- Don’t let it burn!
- Put the quinoa in a bowl and top it with your choice of the ingredients above.
- Add dressing.
