Crockpot Split Pea Soup

Ingredients

  • 3 cups  green split peas
  • 9.5 cups water (or veggie broth)
  • 1 tbsp oil
  • 1 large yellow onion, diced (2 cups or so)
  • 3 large  carrots, diced ( 2 cups or so)
  • 4 large celery stalks, diced (2 cups or so)
  • 4 garlic cloves, chopped
  • 2 bay leaves
  • 2 and ½ tablespoon “Better than Bouillon Seasoned Vegetable Base”
    • Skip if using veggie broth instead of water
  • 1 and ½ teaspoon salt
  • ½ tsp ground black pepper
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • ½ tsp dried thyme
  • ½ tsp paprika
  • ¼ tsp cayenne pepper
  • 1 and ½ teaspoon granulated garlic
  • 1 tsp liquid smoke (optional)

Instructions

  1. Rinse the green split peas well and add them along with the rest of the ingredients to your crockpot.
  2. Cover and cook on low for 8-9 hrs or on high for 5-6 hrs, until peas are (fall apart) tender.
  3. Add additional salt and pepper if you like and more water/bouillon or broth if the soup seems to thick.
