Crockpot Split Pea Soup

Ingredients
- 3 cups green split peas
- 9.5 cups water (or veggie broth)
- 1 tbsp oil
- 1 large yellow onion, diced (2 cups or so)
- 3 large carrots, diced ( 2 cups or so)
- 4 large celery stalks, diced (2 cups or so)
- 4 garlic cloves, chopped
- 2 bay leaves
- 2 and ½ tablespoon “Better than Bouillon Seasoned Vegetable Base”
- Skip if using veggie broth instead of water
- 1 and ½ teaspoon salt
- ½ tsp ground black pepper
- 1 tsp ground cumin
- 1 tsp ground coriander
- ½ tsp dried thyme
- ½ tsp paprika
- ¼ tsp cayenne pepper
- 1 and ½ teaspoon granulated garlic
- 1 tsp liquid smoke (optional)
Instructions
- Rinse the green split peas well and add them along with the rest of the ingredients to your crockpot.
- Cover and cook on low for 8-9 hrs or on high for 5-6 hrs, until peas are (fall apart) tender.
- Add additional salt and pepper if you like and more water/bouillon or broth if the soup seems to thick.
